Weekday Meal Prep

Each Sunday, I prep weekly meals for my family since I don’t have time to cook during the week. Here is what we had this week, and do not forget to share your week day meals on social media with hashtag #STEMCooks

Breakfast

Cinnamon Rolls – Holiday weekend

Bacon  – Holiday weekend

Toast

1/2 Avocado

Pinch of Red Pepper Flakes

1 Large Boiled egg

Lunch

(I used all the ingredients from Epicious click here)

Dinner

1 Cod

1/4 teaspoon of Cajun Seasoning

1/4 teaspoon of Parsley

1 teaspoon of butter

1 cup of Broccoli (Roasted with Olive Oil, Salt and Garlic Pepper)

Cook in the oven for 400 deg for 15 – 20 mins

Dessert

Pineapple Upside down Minis

12 slices Pineapple 

12 Cherries 

Brown sugar

Box of yellow cake mix
