Weekday Meal Prep

Each Sunday, I prep weekly meals for my family since I don’t have time to cook during the week. Here is what we had this week, and do not forget to share your week day meals on social media with hashtag #STEMCooks

Breakfast

(I will be switching  back and forth from day to day between the yogurt and Sweet potato/Egg)

1/3 cup of Greek Yogurt ( Cabot 2% Greek Yogurt)

1/4 cup of Butterscotch/Chocolate pudding ( Jello)

Cranberries (optional)

Steamed Small Sweet Potato

1 Large Boiled egg

Lunch

(I used all the ingredients from Tastemade Youtube video here)

Dinner

1/3 cup of steamed cauliflower rice

1/4 cup of Toasted and Seasoned Chickpea ( Cayenne pepper, Onion pepper, Garlic powder, Salt and Pepper to taste)

1/4 cup of black beans

1/4 cup of corn

1/4 cup of petite tomatoes

Lettuce

Half of an Avocado (if desired)

Dessert/Snacks

Store Bought Cookies / Pita & Hummus Dip (Don’t Judge Me)
